Guava Pandebono

Plate piled with golden pandebono cheese bread rolls, some filled with a dab of guava paste

If you've never had a pandebono, ask a Colombian friend — and watch their face light up. Better yet, make this version and you might change their life. A warm, cheesy little bread with a sweet pocket of Conchita Guava Paste tucked inside. ¡Tan rico!

Ingredients

• 3/4 cup cassava starch or yuca flour

• 1/2 cup precooked cornmeal or any arepa flour

• 2 cups queso fresco

• 1/2 cup feta cheese

• 3 tablespoons butter

• 2 large eggs

• 12 small cubes of Conchita guava paste

How to make it

  1. Pre-heat the oven to 400°F.

  2. In a food processor, add the yuca flour, precooked cornmeal, cheese and butter. Process until well combined. Add the eggs slowly while food processor is running.

  3. Divide the mixture into 12 equal portions, shaping them into balls. Make a hole in the middle of each ball and insert one piece of the Conchita guava paste.

  4. Place on a baking sheet lined with parchment paper and bake for about 15 minutes or until golden on top. Serve warm. Enjoy warm, ideally with a strong cup of coffee.
