Do you have a go-to dessert? If not, you do now. Galletas María are one of the most beloved cookies in the Latin world — perfect with cafecito, perfect on their own, and absolutely perfect sandwiched around a scoop of ice cream. Easy, nostalgic, and over in three bites.

Ingredients

• ½ cup Your favorite chocolate candy chopped into little pieces

• ¼ cup chocolate chips

• 3 cups vanilla Ice cream

How to make it

  1. In a medium-size bowl, mix your ice cream and your favorite chocolate candy.

  2. Place your ice cream mixture in the freezer and let it freeze until firm, for about 1 hour.

  3. Grab your Conchita Galletas María and lay them out on a plate.

  4. Scoop up 1 scoop of your ice cream mixture onto one of the Conchita Galletas María and top with another cookie, bottom side down. Make sure the ice cream reaches the border of the cookies.

  5. Place chocolate chips on a dish, and roll the ice cream sandwich on its side over the chips to cover all around.

  6. Repeat steps 4 and 5 for the rest of your cookies.

  7. Place all 9 Conchita Galletas María ice cream sandwiches onto a cookie sheet and freeze until firm, for 1 hour before serving.

¡Ay mi madre, qué delicia!
