Chicken Bowl de la Abuela!

Chicken bowl with sliced grilled chicken over white rice and lettuce, with black beans, corn and diced tomatoes

White rice, black beans, avocado, chicken — sounds like a balanced plate, right? Now let Abuela Conchita show you how she turns those four basics into a bowl the whole family asks for by name. Conchita Bitter Orange Marinade is the secret; everything else just follows along.

Ingredients

For Chicken:

• 2 tablespoons of Conchita Bitter Orange Marinade

• 1 tablespoon Conchita Olive Oil

• 1 large clove garlic chopped

• Ground chili to taste

• Ground cumin and salt to taste

• 3/8 cup of fresh chopped cilantro

• 4 large chicken breasts

• 3 7oz cans of Conchita Red Pimientos

For Burrito Bowl:

• Romaine lettuce leaves

• Half can of Conchita Black Beans or Conchita Chickpeas

• Half cup of corn or Conchita Hearts of Palm, sliced

• Half red onion chopped

• 1 avocado peeled and sliced

• 1/2 cup of Conchita White Jasmine Rice cooked

How to make it

Marinate the chicken breasts in Conchita Bitter Orange Marinade, olive oil, garlic, chili, cumin, salt, and cilantro for at least 30 minutes. Grill or pan-sear until cooked through and slice. Build your bowl: start with romaine lettuce, add the cooked rice, black beans or chickpeas, corn or hearts of palm, red onion, avocado slices, and top with the sliced chicken and Conchita Red Pimientos. Drizzle with extra Bitter Orange Marinade if desired.
