Alix's "Garlic-ky" Bean Dip

Creamy white bean dip garnished with parsley, served in a bowl surrounded by crispy crackers

Every family has one of those recipes that gets named after the cook who made it famous. This is Alix's — a garlicky, creamy bean dip built on Conchita Great Northern Beans and a generous pour of olive oil. Set it out with crackers, sliced bread, or whatever's in the pantry. It won't last long.

Ingredients

• 1 15.5 oz Conchita Great Northern Beans, drained and rinsed

• 2 garlic cloves, minced

• ½ small shallot, finely sliced

• 2 pinches of salt

• 4 pinches of Herbs of Provence

• Juice of ½ of lime

• ¼ cup of grated parmesan cheese

• 2 tbsps. Conchita Extra Virgin Olive Oil

How to make it

Combine all the ingredients to blender or food processor. Blend until mixture is creamy. Transfer to a serving bowl and refrigerate and least 1 hour before serving.
