One of Abuela Conchita’s most requested recipes is her traditional Ceviche! A delicious raw seafood dish que te va a dejar deseando por más! A refreshing, vibrant and healthy treat for these upcoming hot Summer days!

INGREDIENTS
1-1.5 lbs. of 1×1 chunks of raw seafood of your choice (Scallops, salmon, shrimps and any white fish)
50ml/9fl oz of Conchita Lemon Blend
1 white/red onion, finely chopped
2 tbsp of Conchita Extra-Virgin Olive Oil
¼ cup of Conchita Red Pimientos, finely chopped
¼ cup of Conchita Manzanilla, finely chopped
1 green chili, finely chopped (Optional)
1 tomato, finely diced
1 Cilantro bunch, chopped
1 Avocado, sliced to garnish
Salt to taste
Pepper to taste
Tortilla chips, to serve

INSTRUCTIONS
1. In a glass bowl, add diced onions, tomatoes, pimientos, cilantro and Conchita Olives, as well as, Conchita Lemon Blend, salt and pepper to taste and mix ingredients with a wooden spoon.
3. In the same bowl, add seafood. Mix gently and make sure to coat all of your seafood in Conchita Lemon Blend.
4. Cover and let marinate in the refrigerator for 30 minutes.
5. Serve in small bowls, or tortilla chips and garnish with slices of avocado.
